TUESDAY NIGHT FARM MARKET – 5pm – 8pm. Arrive early around 4:30 for a good parking spot, and to avoid the big crowds. We will have our QUESO FRESCO available at the market, a wonderful everyday cheese to crumble over salads, tacos, over tomatoes. Fresh, crisp, clean milk flavor! Just ask Piper! QUESO OAXACA
This is another stretch-cheese, Mexico’s version of mozzarella, There is an quick version that takes about 2-3 hours, or the fermented natural-cheesemaking version that takes about 12 hours. I have now tried them both, there is a difference in flavor and texture for sure, but both better than anything from the store.
Tonight we are trying Chili Relleno Eggrolls with our fresh Queso Oaxaca.
My raw feta has now been fermenting for nearly a month.
Another 4lb round of Farmers Cheese entered the fridge last night to sit and mellow for 3-4 days, while I turn it every 4 hours. Hopefully this will be ready for the potluck this Saturday!
I am starting to build some good skills, somethings are feeling super good and intuitive now, and I just purchased wax for my next lesson in preserving raw cheeses! Moving right along …

TRAINING
I hope you all had a safe and as stress free as possible 4th of July. I know that tonight we will all sleep well as we’ve had some late nights with all of our animals. No matter how you want to scribble outside of the lines, this season sucks the big one for all animals.
With stress, normal to 4th of July level, it isn’t just the nervous system that takes a hit, it is also the gut. Like Dr. Andrew Wakefield tried to tell everyone in 1990, the Gut/Brain connection is real.
This is a good time to really invest in building a strong gut with your animals, a system that nourishes the entire animal. Species appropriate food, appropriate probiotics, and the true essentials – sunshine, fresh air, movement, and walking on dirt. If you need help with any of this, I am a phone appointment away!
