Cheese Cake or …

Here it is – my first Käsekuchen! This cheese cake kind of hijacked all of last week. Working with a recipe that was 150 years old has its alure and also some drawbacks, like lost directions, or ingredients but no amounts. I think way back when they just assumed you knew the basics of baking!

So I ended up making three – orange zest, lemon zest, no zest. All good, all different, and I had to cross reference a bunch.

The modern recipes that use lets say – cornstarch, boxed pudding, cool whip – to help bring everything together look WAY easier than the recipe I used. But all in all, I am pleased and I also feel like I have built some new skills.

This week I also made –

4lb wheel of Farmers Cheese – has a buttermilk flavor that is kind of addicting

Fresh Feta in Olive oil and black peppercorn

Primo Sale – that I am going to turn into mozzarella

… and I start on my Alpine Cheeses this week. The rule of thumb in cheese making over 150 years ago is that alpine cheeses were only made when the goats were on thick green grasses, and that time is right now!


EVENTS – Mark your calendars!

We have a few more weeks of KID HAPPY HOUR and would love to have you join us. We have about 4 children that have now come more than 8 times each. They can tell you the names, parents, siblings, what each kid likes and doesn’t like, etc… I LOVE THIS! We have had so many wonderful people come over!

TRAINING

Peppers Mom has been riding this Norwegian Stallion in parades around SW Montana the past couple of weekends but will be back in puppy class this Sunday. If she isn’t training and working with Pepper she is training horses, the life of an animal person!

You’ll be seeing a bunch of our clients in parades, rodeos from Livingston to Ennis, and Ranch Festivals with stock dog training and animal handling demo’s in general. Make sure you say HELLO! Animal folks get super busy in the summer.

SEPTEMBER Adult Specialty Class (DISTRACTION TRAINING) – 11am

We are scheduling through summer right now. If you are interested in group classes, phone appointments – please consider registering in advance.

One-on-One Coaching in person for the summer is now FULL. Next available appointments looks to be September.

One-on-One PHONE COACHING is available during the week, mid day.
