I feel like a time-traveler. I get lost in the stories of the way animals and our food systems used to be. How food tied people to place, and place was viewed as everyone contributing to health, which equaled a super awesome life. Everything had value from the soil up.
The best dairy was viewed as raw and came from grass-fed well tended healthy animals. Fact. Never intended to be industrial, or to scale into huge dairies, or to be commercial. It was always small herds on healthy pastures serving local communities.

My oh my how times have changed. Now the majority of people in hospitals are on government approved diets. Doesn’t seem to be working so well.
The stories of milk and cheeses, villages and cheese caves, highland pastures, and herds spanning generations in the same family – and the milk-cultures handed down all held this time, this place, and the history of a world so beautiful.
Our milk-culture that we are now using for our kefir and cheeses is twenty seven years old – we have had it for almost four years, and I hope to pass this along to my children in the hopes they will bring something back that was lost from my family in the European Alps.

NEW WORLD SCREW WORM
New World screwworm (Cochliomyia hominivorax) is a parasitic fly whose larvae infest and feed on the living tissue of warm-blooded animals, causing severe wounds, secondary infections, and potentially death. Although eradicated from the United States in 1966, the parasite has spread northward through Central America and Mexico since 2023, breaching containment efforts.
Recent Outbreak in the U.S. On June 3, 2026, the USDA confirmed the first U.S. case in decades in a 3-week-old calf in Zavala County, Texas, approximately 30 miles from the Mexican border. This detection marks the first infestation in the U.S. since 2017 and has triggered an aggressive USDA response, including the establishment of a 12-mile infested zone and increased border surveillance. Experts warn that an uncontrolled outbreak could cause up to $1.8 billion in economic damage to Texas and further shrink the already low U.S. cattle supply

YOUR DOG only cares about you, what you are going to do together, and if you are trustworthy and safe. Training is not convenient, training takes a lifetime, and not everyday will be smooth.
But I do believe that the more you do, the more you learn, the better your confidence as your dog owner happens – and YOUR DOG deserves your efforts.
