My Cheese Education is coming along!
I have passed the stage of – I don’t know what I don’t know yet.
I am entering the stage of – I now know the things I don’t know, and there is a lot to know!
Some of the techniques and words specifically for cheese making are becoming normal, comfortable, and feel familiar. The fresh cheeses I have enjoyed making, and have tried to make each one at least a dozen times to really focus on technique and skill.
The Alpine cheeses are next level, I have had some disastrous outcomes, and mild successes. Some are aging and as yet to be determined!
The photo above is my Farmers Cheese. Maybe my favorite fresh cheese. Mild and tangy like buttermilk, and so darn good on crackers and sandwiches, and in omletes!
Today I am making more mozzarella, not my favorite cheese but I do like the goat milk better than the cow milk mozzarella for sure. It is a family favorite for sure for anything that needs a gooey cheese, and I am getting better and better at the ‘filata pasta’ technique of stretching.

CONSULTATIONS – If you are looking for biodynamic information, natural-rearing animal knowledge, or setting up systems – we would love to work with you. We get to see a lot of cool visions and plans for projects, large and small, and are able to share our knowledge with what we do best. Like the saying goes – ‘If you don’t have time to do it right, when will you have time to do it over?’
There are some trends, most likely national, but for sure local, that you don’t have to make if you have the right tools and information –
- budget, land, project are mismatched
- systems/uses not matching land in current state
- animal selections done on a whim with no knowledge of appropriate food, structure, management, care
- animal selection over the skill level of owner or incorrect for land/space
- time, not budgeting the time requirements it takes for – land, animals, or gardens
PAWS & PEOPLE

TRAINING
Dogs, goats, kids, fig trees, ducks, squash – I am in training mode most of my day!
We have started our summer PACKGOAT trail training, so super fun! This past week we ran into some dog agility friends who we’ve known for over 26 years who were out training their horses. It is so good for the heart to be out in the mountains with others who are training their animals, enjoying a gorgeous day, and stopping for a friendly chat.
Pablo & Picasso are just 9 months old. They won’t carry any weight for some time, but are already doing so well.
